Green, the color of growing grass and leaves, is the base color of the Bangladesh flag. The green symbolizes life, hope, strength, and youthfulness. The green implies the rich vegetation and the greenery of the country and the hope placed in the youth, the next generation. Red, the color of blood, love, heat sits in the middle of the Bangladesh flag, signifying the rising sun and the blood shed during the freedom fight in 1971 to gain independence from Pakistan.
Over the years, many non-Bangladeshis have misinterpreted the green base of Bangladesh flag as the color of Islam. Though a major portion of Bangladesh’s population is Muslim, this interpretation is incorrect.
On December 16, 1971, the Pakistani forces surrendered which marked the end of Bangladesh Liberation War. All over the world, Bangladeshis celebrate the day as “Bijoy Dibosh” or Victory Day. We are celebrating the day with all natural green velvet cupcake with all natural red vanilla cream cheese frosting.
Now, not all of you celebrate Bangladesh’s Victory Day, but look at those colors. Green and Red. The color of the holiday season. Don’t you think these gorgeous cupcakes will dazzle your holiday table too?
To all my Bangladeshi readers, fans and friends –
আপনার, আমার, আমাদের সকলের হৃদয়ে বাংলাদেশ! বিশ্বজুড়ে বাংলাদেশী সবাইকে বিজয় দিবসের অভিনন্দন!
- 2 cups (packed) fresh spinach (about 4 ounce, ½ cup puree)
- 2 tablespoon freshly squeezed lemon juice
- ½ cup extra virgin olive oil
- 2 eggs
- ¼ cup brown sugar
- ½ cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoons pure vanilla extract
- 8 fresh raspberries (optional)
- 1 tablespoon confectioner's sugar (optional)
- Steps to make puree:
- Wash and chop spinach. Discard stems if too long or thick.
- Place in a food processor or blender. Add lemon juice, olive oil and make a silky, smooth puree. Set aside.
- Steps to make cupcake:
- Preheat oven to 350 degrees Fahrenheit.
- Line or grease a 8 cup muffin tray.
- Combine the flour, baking powder and salt. Set aside.
- Beat eggs and sugar until light in color.
- Fold in spinach puree and vanilla. Mix well.
- Slowly add flour mixture to the wet ingredients.
- Pour batter into prepared cupcake tray.
- Bake 15 minutes or until a skew comes out clean when inserted in the center of a cupcake.
- Frost top of cake with the all natural red frosting (recipe below).
- Coat raspberries with confectioner's sugar. Place on top of frosting. (Optional)
Depending on the oven temperature, baking time may vary.
To achieve the best color, make the spinach puree as smooth as possible.
- 1 small beet
- 2 tablespoon granulated sugar
- 2 ounce Neufchâtel cheese
- 2 ounce mascarpone cheese
- ½ teaspoons pure vanilla extract
- Peel, wash and cut beets into cubes.
- Sprinkle some water and cook in low heat.
- As the beet cooks, it will release deep red juice.
- Measure 6-8 spoons of juice. Set aside to cool.
- Whip the cheese, sugar and vanilla until smooth.
- Start adding the beet juice until desired color is achieved.
- Use the all natural red frosting to frost cakes or cookies.
You may need more or less juice depending on the beet quality and the color the juice produces.
Use the un-used cooked beets in salad or eat as is.
You can use either Neufchatel cheese or mascarpone cheese. I was planning to use only mascarpone but ran out, so added the Neufchatel instead of making a trip to the grocery.
We are not a big fan of buttercream frosting, but if you prefer, you can use the beet juice to your favorite buttercream frosting for an all natural red buttercream frosting.

উপকরণ:
২ কাপ তাজা পালং শাক (প্রায় ৪ আউন্স তাজা শাক বা ১/২ কাপ পেষ্ট)
২ টেবিল চামচ লেবুর রস
১/২ কাপ তেল
২টি ডিম
১/৪ কাপ বাদামী চিনি
১/২ কাপ কন্ফেকশনার্স চিনি
১ কাপ ময়দা
১ চামচ বেকিং পাউডার
১/২ চা চামচ লবণ
১ চা চামচ ভ্যানিলা
শাকের পেষ্ট প্রস্তত প্রণালী:
১. শাক ধুয়ে কুচি কুচি করে কেটে নিন। শাকের পাতার বোটা বেশী লম্বা হলে ফেলে দিন।
২. একটি ফুড প্রসেসর বা শিলপাটায় মিহি করে বেটে নিন। প্রয়োজনে লেবুর রস ও তেল যোগ করে মসৃণ পেষ্ট তৈরী করে নিন।
কাপকেক প্রস্তত প্রণালী:
১. ওভেন ৩৫০ ডিগ্রী ফারেনহাইটে প্রিহিট করুন।
২. ৮ টি কাপের মাফিন ট্রেতে কাপকেক লাইনার দিয়ে রাখুন বা তেল মাখিয়ে রাখুন।
৩. ময়দা, বেকিং পাউডার ও লবণ একসাথে মিশিয়ে রাখুন।
৪. ডিম এবং চিনি হালকা রঙ না হওয়া পর্যন্ত ফেটতে থাকুন।
৫. শাকের পেষ্ট, এবং ভ্যানিলা মেশান।
৬. ধীরে ধীরে ডিমের মিশ্রণে ময়দার মিশ্রণ যোগ করুন।
৭. প্রস্তুত রাখা কাপকেক ট্রেতে খামির ঢেলে নিন।
৮. ওভেনে কাপকেক ১৫ মিনিট বেক করুন। টুথপিক ঢুকিয়ে পরিস্কার ভাবে বের হলে বুঝতে হবে কাপকেক বেক হয়ে গিয়েছে।।
৯. ওভেন থেকে বের করে সম্পূর্ণ ঠান্ডা করে নিন।
১০. পাইপিং ব্যাগে করে লাল ফ্রস্টিং ( নীচের রেসিপি ) দিয়ে সাজিয়ে নিন।
রেসিপি : ন্যাচারাল লাল ফ্রস্টিং
উপকরণ:
১ টি ছোট বীট
২ টেবিল চামচ কন্ফেকশনার্স চিনি
২ আউন্স নুশাটেল চীজ
২ আউন্স মাসকারপোন চীজ
১/২ চা চামচ বিশুদ্ধ ভ্যানিলা
ফ্রস্টিং প্রস্তত প্রণালী:
১. বীট ছিলে, ধুয়ে, কিউব করে কেটে নিন।
২. কিছু পানি ছিটিয়ে, কম তাপে বীট সেদ্ধ করুন।
৩. বীট রান্না হতে হতে, বীটের রস গভীর লাল রং ধারন করবে।
৪. ৬-৮ চামচ পরিমাপ রস সরিয়ে, ঠান্ডা করে নিন।
৫. মসৃণ না হওয়া পর্যন্ত চীজ, চিনি এবং ভ্যানিলা ভালোভাবে ফেটান।
৬. পছন্দসই রঙ না হওয়া পর্যন্ত বীট রস যোগ করতে থাকুন।
৭. তৈরী হয়ে গেল ন্যাচারাল লাল ফ্রস্টিং।

Liz – I know what you mean and you are 100% correct. I wouldn’t have posted this if I didn’t like the cupcakes. About the flavor, you can’t tell these green velvet cupcakes are made of spinach at all. People at awe when I tell them they have lots of spinach in them. Try out sometimes and you’ll be surprised how good they taste.
Even my husband who is not a big fan of dessert or food with hidden vegetables happily gobbles few of the cupcakes. Great for kids as well 🙂
