Hari Kabab, A Curry Like Kabab

The spirit of charity runs high during Islamic celebrations such as Ramadan and Eid. Every Muslim who sacrifices an animal for Eid-Ul-Adha must share their sacrificed meat with their family, friends and poor brethren. It is a wonderful time as the spirit of sharing and giving on this Eid is high. No Muslim goes hungry during the joyous days of Eid Al-Adha!

Along with all the sharing and charity, Eid-ul-adha is also a time to celebrate. It is also a time to savor on some delicious dishes. As you may have rightly guessed, meat dominates the scene during the festivities. Preparing mouthwatering kababs, koftas, biryanis enhance the mood of the celebration to a greater heights. Hari kabab is one such dish that is cooked in many families. I make this special kabab almost every year during Eid to treat my loved ones. This is often my go to kabab for Eid parties and dinner parties too.

Now, when you think about kabab, what comes to your mind? Something similar to sheekh kabab that is grilled or flattened shaped fried kababs like shami kabab, right? Well, let’s explore a different type of kabab today called hari kabab. Hari kabab is prepared a bit differently than most other varieties of kababs. This special kabab is cooked in a hari (হাড়ি) meaning a round spherical shaped pot similar to a bean pot. Hence, the name. Further difference from other kababs is that Hari kabab has a curry like texture and looks. Sharing the recipe with you so that you can savor each bite of the juicy meat pieces of this sumptuous dry curry like hari kabab straight from a Bangladeshi kitchen.

A curry like Kabab dish Hari kabab that's unique. Unlike other kebabs. Hari kabab is cooked in a round spherical shaped pot similar to a bean pot.

Ingredients

• 2 lbs beef, pounded
• ¾ cup oil
• 1 cup beresta
• 2-3 cloves
• 2-3 cinnamon, about 1” each
• 4 green cardamom
• 1 tablespoon coriander
• 1 teaspoon cumin
• ¼ teaspoon allspice
• ¼ teaspoon caraway seeds
• ½ teaspoon nutmeg
• ⅛ teaspoon mace
• 6-8 black peppercorn
• 1-2 bay leaves
• 3 tablespoons yogurt
• 1 tablespoon ginger paste
• 2 tablespoon garlic paste
• 1 teaspoon red chilli powder
• salt, according to taste

Instructions

1. With a meat tenderizer, pound the meat a little.
2. If you are using premade beresta, fry all the spices from clove to bay leaves in 2 tablespoon oil, about 2-3 minutes.. Else, use the same oil to fry the spices that you used to make beresta.
3. Mix the fried spices and beresta and grind in a food processor or in a mortal and pestle. Set aside.
4. Pour the remaining oil in the pan. Add meat, half the ground spice and all the other ingredients. Stir and cook in medium heat till the water from the beef almost dries up, stirring occasionally.
5. Once the beef is cooked and tender, add the remaining powdered spices.
6. Cook for another 8-10 minutes till oil separates in very medium-low heat.

Notes

Beef releases a lot of water while cooking. Depending on the quality of beef, you may need to add water to make the beef tender. When cooking with beef in the US, I usually do not add water. Use your judgment here.
When serving, you may garnish with additional beresta.

রেসিপিঃ হাড়ি কাবাব

উপকরণ:
২ পাউন্ড গরুর মাংস, (থেঁতলানো)
৩/৪ কাপ তেল
১ কাপ বেরেস্তা
২-৩ টি লবঙ্গ
২-৩ টি দারুচিনি, প্রতিটি প্রায় ১”
৪ টি ছোট এলাচ
১ টেবিল চামচ ধনে
১ চা চামচ জিরা
১/৪ চা চামচ গরম মসলা
১/৪ চা চামচ শাহ জিরা
১/২ চা চামচ জায়ফল
১/৪ চা চামচ জয়ত্রী
৬/৮ টি গোলমরিচ
১/২ টি তেজপাতা

৩ টেবিল চামচ দই
১ টেবিল চামচ আদা পেস্ট
২ টেবিল চামচ রসুন পেস্ট
১ চা চামচ লাল মরিচ গুঁড়া
লবণ, স্বাদ অনুযায়ী

প্রস্তুত প্রণালীঃ
১. মাংস শিলপাটা বা টেন্ডারাইজার দিয়ে থেঁতো করে নিন।
২. বেরেস্তা করার পর সেই তেলে লবঙ্গ থেকে তেজপাতা পর্যন্ত সব মসলা গুলো ভেজে নিন। আর আপনি যদি প্রিমেড বেরেস্তা ব্যবহার করেন তাহলে মসলা গুলো ২ টেবিল চামচ তেল দিয়ে ভেজে নিন।
৩. ভাজা মসলা এবং বেরেস্তা একসাথে মিশিয়ে ফুড প্রসেসরে অথবা নোড়া দিয়ে গুড়ো করে রাখুন।
৪. বাকি তেল একটি প্যানে ঢেলে নিন। তেলে মাংস, অর্ধেক গুড়ো মসলা এবং বাকী উপকরন গুলো দিন। মাঝারি তাপে রান্না করুন যতক্ষণ না মাংস সিদ্ধ হয়ে পানি শুকিয়ে যায়। মাঝে মাঝে নেড়ে দিবেন।
৫. মাংস রান্না হয়ে নরম হলে বাকী গুড়া মসলা যোগ করুন।
৬. মাঝারি তাপে আরও ৮ থেকে ১০ মিনিট রান্না করুন। কাবাব তেলের উপরে উঠলে চুলা থেকে নামিয়ে পরিবেশন করুন।
