Cereals, pancakes, waffles, French toasts, donuts! Even if I do not mention the syrup that goes with some of these, breakfast options in the western countries are often sugar rich. Conversely, in Bangladesh, people usually do not load themselves with sugary treats in the morning. Thin ruti(aka chapatti) with veggies or egg, occasional paratha are common everyday breakfast. Occasionally, there may be some kind of halva to go with ruti or paratha but usually savory food is the way to go for breakfast in Bangladesh. Hot chapri, also known as chapti in some areas, is a savory pancake that is also a very popular breakfast item we, Bangladeshis, enjoy.
For years wheat flour dominated the breakfast scene in Bangladesh. It wasn’t until recently that the people started using the refined flour. Traditional chapris are really savory pancakes made of wheat flour. Modern chapris are often, off course, made with white flour. I like using wheat flour with occasional addition of rice flour. The addition of rice flour makes the chapris a bit crumbly and dense. If you do not have rice flour, skip the rice flour and the chapris will still taste great with wheat or refined flour.
Each bite of chapri has a zest from cumin, garlic, turmeric, green chili, onion and cilantro. All simple everyday ingredients of Bangladeshi cooking but combined together make a very flavorful savory breakfast item. Chapris are satisfying weekend brunch items and are great weekday breakfast options too if you make the batter ahead the night before to save time in the morning. I am sharing the basic chapri recipe today but tap into your imagination and feel free to add any type of grated vegetables to get your serving of veggies with breakfast.
Additional syrup is not necessary because of the medley of flavor the pancakes get from the different ingredients. Some sprinkle a pinch of sugar on top of the chapri but most eat these without adding any condiment. If the thought of eating pancake without a syrup or some condiments doesn’t satisfy your palate be sure to give the radish chutney a try with the chapris.
- 1 cup whole wheat flour
- ½ cup rice flour
- 1 egg
- ½ teaspoon garlic paste
- ½ teaspoon turmeric
- ½ teaspoon cumin powder
- 1 cup cilantro, chopped
- ½ cup onion, chopped
- 2 green chili, chopped
- 1½ cup water
- Salt, according to taste
- Oil, to brush or spray on pan
- Whisk together egg, garlic paste, turmeric, cumin powder.
- Add both flour kinds to the mix. Add water. Batter should be slightly lumpy.
- Add all other ingredients.
- Heat a griddle/fry pan on medium high heat and spray/brush oil.
- Pour about ¼ cup of batter onto the griddle.
- Once bubble starts forming, flip and cook the other side.
- Once both sides are cooked, stack on a plate to serve.
To achieve a lumpy batter, adjust with little more water or flour if necessary.

১ কাপ ময়দা
১/২ কাপ চালের আটা
১ টি ডিম
১/২ চা চামচ রসুন পেস্ট
১/২ চা চামচ হলুদ
১/২ চা চামচ জিরা গুঁড়া
১ কাপ ধনেপাটা, কুঁচি করে কাটা
১/২ কাপ পেঁয়াজ, কুঁচি করে কাটা
২ টি কাঁচা মরিচ, কুঁচি করে কাটা
১ ১/২ কাপ পানি
লবণ, স্বাদ অনুযায়ী
তেল, প্যােরন উপর স্প্রে বা ব্রাশ করার জন্য
প্রণালী:
- ডিম, রসুন পেস্ট, হলুদ, জিরা গুঁড়া একসাথে মেশান।
- মিশ্রণে ময়দা ও চালের আটা যোগ করুন। পানি দিন। অন্যান্য সব উপকরণ মেশান।
- প্যানে ১/৪ কাপ পরিমানে আটার গোলা ঢালুন।
- একদিকে বুদ্বুদ আরম্ভ হলে চাপরি উল্টে দিন।
- দুই পাশে রান্না হয়ে গেলে একটি প্লেেট সাজিয়ে পরিবেশন করুন।
প্রয়োজনিও কিছু টিপস্ এর জনে্য দয়াকরে আটির্কেল অথবা ইংরেজি রেসিপির নোট সেকশন টা একটু দেখে নেবেন।
