For those in the USA, I hope you are having a great memorial day weekend, and those around the world, I hope you had a fabulous weekend too! We are having a blessed weekend surrounded by family from coast to coast as we got together to celebrate my cousin’s graduation, a newly minted mechanical engineer in the family. We often forget what a blessing it is to have a family who will come together in good times and bad.
When there is family and get together, food is an integral part of it. Previously, I mentioned that Hilsha fish, “Ilish mach” as it is fondly known, is adored by Bengalis. There are many recipes with Ilish that are near and dear too every Bengali. Previously, on my shorshe salmon post I have also mentioned that, good quality Padma Ilish is extremely difficult to find in North America these days and salmon is a handy substitute. I have been looking for Padma ilish for a while now but in vain. The ones I find in the stores are from other parts of the world and they are just not comparable.
Ilish pulao is a famous rice dish in Bangladesh, often cooked during special occasions. It has been years since I had this special pulao. Therefore, until I find good quality ilish in the Bangladeshi supermarkets, I am succumbing to make a very flavorful rice dish with salmon. Though the salmon pulao lacks the authentic ilish pulao pungent fragrant, it is absolutely delicious. I wasn’t planning on sharing this recipe, but the pulao turned out great, so here I am sharing it with all you my dear friends.

- 2 lb salmon
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- ½ cup oil
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- ¼ cup onion paste
- 1 table spoon coriander powder
- ⅓ cup yogurt
- 2 teaspoon sugar
- 1 tablespoon salt
- 2 pieces cinnamon, about 1” each
- 3-4 green chilies
- 2 cups basmati rice
- Wash fish pieces and drain all water. Sprinkle some turmeric and red chili powder and mix.
- Wash rice and drain all the water.
- Turn on stove and add oil in a pan. Add ginger paste, garlic paste, and onion paste. Stir for 1-2 minutes. Add ¼ cups water and stir for another 2-3 minutes.
- Add coriander powder, yogurt, sugar, and salt. Combine the spices and add the fish pieces.
- When the oil separates from the fish pieces and water almost dries up, take out the fish pieces leaving the spice mix. Set aside.
- In the same pan, add rice and all other ingredients. Fry for 2-3 minutes until fragrant.
- Add 3 cups hot water to the rice and cover. When water starts to bubble in the rice, lower the heat to medium low.
- Turn off stove when rice is cooked, in about 20-22 minutes.
- Take out half the rice from the pan and arrange the fish pieces on rice. Add the set aside rice and cover the pan again. Wait about 15 minutes for flavors to blend before serving.
Shad fish can also be use instead of Salmon to cook this pulao.
রেসিপি : স্যামন পোলাউ
উপকরণ:
২ পাউণ্ড স্যামন
১ চা চামচ হলুদ গুঁড়া
১ চা চামচ শুকনা মরিচের গুঁড়া
১/২ কাপ তেল
১ চা চামচ আদা বাটা
১ চা চামচ রসুন বাটা
১/৪ কাপ পেঁয়াজ বাটা
১ টেবিল চামচ ধনে গুঁড়া
১/৩ কাপ দই
২ চা চামচ চিনি
১ টেবিল চামচ লবণ
২ টুকরা দারুচিনি, প্রতিটি প্রায় ১”
৩-৪ কাঁচা মরিচ
২ কাপ বাসমতী চাল
প্রস্তত প্রনালী:
১. মাছের টুকরা ধুয়ে এবং সমস্ত পানি নিড়িয়ে নিন। একটু হলুদ এবং শুকনা মরিচ গুঁড়া ছিটিয়ে মাছের টুকরার সাথে মিশিয়ে নিন।
২. চাল ধুয়ে নিন এবং সমস্ত পানি নিড়িয়ে নিন।
৩. চুলা চালু করে একটি হাঁড়িতে তেল গরম করুন। আদা বাটা, রসুন বাটা, এবং পেঁয়াজ বাটা দিয়ে ১-২ মিনিটের জন্য কষিয়ে নিন। ১/৪ কাপ দিয়ে আরও ২-৩ মিনিটের জন্য কষিয়ে নিন।
৪. ধনে গুঁড়া, দই, চিনি , এবং লবণ দিয়ে মশলায় মাছের টুকরা যোগ করুন।
৫. মাছ থেকে তেল বের হয়ে পানি প্রায় শুকিয়ে আসলে, মসলা হাঁড়িতে রেখে মাছের টুকরাগুলো তুলে নিয়ে সরিয়ে রাখুন।
৬. একই হাঁড়িতে চাল এবং অন্যান্য সব উপকরন যোগ করুন। ২-৩ মিনিট নেড়ে সুগন্ধি না বের হওয়া পর্যন্ত চাল ভেজে নিন।
৭. ৩ কাপ গরম পানি চালে দিয়ে ঢাকনা দিয়ে দিন। পানিতে বুদ্বুদ উঠলে, চুলার আঁচ কমিয়ে মাঝারি কম তাপে রান্না করুন।
৮. প্রায় ২০-২২ মিনিটের মধ্যে চাল সিদ্ধ হয়ে গেলে চুলা বন্ধ করুন.
৯. হাঁড়ি থেকে অর্ধেক ভাত টুলে নিয়ে ভাতের উপর মাছের টুকরা গুলো সাজিয়ে দিন। বাকি ভাত মাছের উপর দিয়ে আবার হাঁড়ি ঢেকে দিন। ১৫ মিনিট অপেক্ষা করে পোলাও এর সুগন্ধি বের হলে পরিবেশন করুন।
প্রয়োজনিও কিছু টিপস্ এর জন্যে দয়াকরে আটির্কেল অথবা ইংরেজি রেসিপির নোট সেকশনটা একটু দেখে নেবেন।
