The timing was perfect. I saw some organic tomato on sale under a buck right in time when we just finished our organic bottle of ketchup. Who doesn’t love ketchup? Dipping French fries, slathering on burgers and hot dogs, with breakfast eggs. The sweet, tangy, red tomato sauce is a staple condiment in many homes. Sadly, the leading brand tomato ketchup sold in the US supermarket lists both corn syrup and high fructose corn syrup as its ingredients. Same goes for most other brands. The organic ketchup made without HFCS is only available at a handful number of stores with a hefty price tag.
Making ketchup at home is extremely easy. I saw my mom made it many times when we were in Bangladesh. This artisan ketchup recipe is what my mom used to follow. No canned tomato paste, no high fructose corn syrup here. Made from the freshest tomatoes only. I wish I could say the tomatoes were freshly picked from my garden, but they were not. The store bought fresh organic tomatoes was just fine. Easy steps with ingredients you already have in the pantry, so there is no reason to save some buck and make a batch of sweet, tart, flavorful tomato ketchup at home.
Keeping a jar of fresh ketchup is a basis for many sauces and dressings. R loves it with her pasta for lunch, with baked samosa for snack and the quinoa burgers I make sometimes for dinner. Since tomatoes are part of the EWG’s dirty dozen list, it is extremely important for me to only buy, specially feed R, organic tomatoes. With a jar of organic ketchup at hand I can rest easy. No more worrying about pesticides, BPA and high fructose corn syrup.
Depending on how sweet your tomato is, you may need to adjust the sugar, salt, and chili quantity. My homemade ketchup has the same ketchupiness that we all love. Smooth, sweet, tart, vinegary, not so tomatoey. Have you ever made ketchup from scratch?
- 6 lbs tomato
- ½ cup onion, chopped
- 4-6 dry red chilies
- 8-10 cloves
- 4 pieces of cinnamon, about 1” each
- ½ cup brown sugar
- 3 teaspoon salt
- ⅔ cup vinegar
- Wash and cut the tomatoes in half.
- Cook tomato, onion, chilies, clove and cinnamon in low heat. Stir time to time to prevent burning. Sprinkle some water if needed to prevent burning.
- Turn off stove when tomatoes are soft and tender.
- When tomato is cold enough to handle, peel the tomato skin off of the flesh. Mash/puree the tomato and strain through a strainer. Discard the seeds.
- Add sugar, salt and vinegar to the puree and cook till ketchup thickens.
- Store in airtight glass jars.
The ketchup can be stored in refrigerator for 4+ months.
If your jar lid is metallic, the ketchup may turn blackish.
I prefer to use brown sugar for ketchup. You can substitute brown sugar with regular sugar if you want.

১/২ কাপ পেঁয়াজ, স্লাইস
৪-৬ টি শুকনা মরিচ
৮-১০ টি লবঙ্গ
৪ টুকরা দারুচিনি, প্রতিটি প্রায় ১”
১/২ কাপ ব্রাঊন চিনি
৩ চা চামচ লবণ
২/৩ কাপ ভিনেগার
প্রস্তত প্রনালী:
১. টমেটো ধুয়ে অর্ধেক করে কেটে নিন।
২. অল্প আঁচে টমেটো, পেঁয়াজ, মরিচ, লবঙ্গ চুলায় দিন। মাঝে মাঝে নেড়ে দিন ও পানির ছিটা দিন যেন হাঁড়িতে লেগে না যায়।
৩. টমেটো নরম হলে চুলা বন্ধ করুন.
৪. টমেটো একটু ঠাণ্ডা হলে টমেটোর পাতলা আবরণটি তুলে ফেলে দিন। এবার টমেটো ভালভাবে ঘুটে নিন এবং একটি বাঁশ বা এলুমিনিয়াম ছাঁকনিতে চেলে নিয়ে বীচি ফেলে দিন।
৫. ছাঁকা টমেটোর সাথে চিনি, লবণ এবং ভিনেগার মিশিয়ে চুলায় দিন। ঘন হলে নামিয়ে নিন।
৬. বায়ুরোধী কাচের বয়ামে ৪-৬ মাস ফ্রিজে রাখতে পারেন।
