Life in today’s busy, fast-paced modern world can be complicated. The winner of the Saffron Road gift basket is Mahmuda Sultana!! Congratulations!
- 15.5 oz can of chickpeas (1 ½ cups cooked)
- 1 tablepoon olive oil
- 1 cup onion, sliced
- 2 garlic cloves, crushed
- 4 tablespoon Saffron Roads Harissa Simmering Sauce
- ½ teaspoon, salt or according to taste
- 5 oz mixed greens (spinach, argula, spring greens, etc.)
- 4-6 eggs
- Rinse and drain the chickpeas.
- Heat olive oil in a saucepan; add onion, garlic and sauté over medium heat until caramelized. This should take about 6-8 minutes.
- Add the harissa sauce and stir through chickpeas, salt and two tablespoons of water. Simmer for about 6-8 minutes until thick.
- Add mixed greens and stir it through the mixture. Once the greens are a bit wilted, turn off the stove.
- Preheat oven to 350 degrees Fahrenheit.
- Spoon chickpea mixture into two shallow ovenproof dish or remekins.
- Make 2 or 3 indents in mixture with a spoon, and crack an egg into each.
- Bake until eggs are just set about 12-15 minutes.
- Serve hot with pita or crusty bread.
Try a variation of this with chard or kale.
Use other legumes such as white beans, kidney beans, etc.
Notes :
- Alternatively, the eggs can also be cooked on stovetop instead of baking. Add additional ½ cup water to the chickpeas, crack the eggs and cook until eggs are done.

উপকরণ :
১৫.৫ আউন্স কাবুলি ছোলার ক্যান ( অথবা ১ ১/২ কাপ সিদ্ধ কাবুলি মটর)
১ টেবিলচামচ জলপাই তেল
১ কাপ পিঁয়াজ, স্লাইস
২ কোয়া রসুন, কুচি করে কাটা
৪ টেবিলচামচ স্যাফরন রোডের হারিসা সস
১/২ চা চামচ লবণ, স্বাদ অনুসারে
৫ আউন্স শাক পাতা (লাল শাক, পালং শাক, ইত্যাদি)
৪-৬ টি ডিম
প্রস্তত প্রনালী:
১. কাবুলি ছোলা ক্যান থেকে বের করে ধুয়ে পানি ঝড়িয়ে রাখুন।
২. প্যানে তেল গরম করে পিঁয়াজ, রসুন দিয়ে মাঝারি তাপে ৬-৮ মিনিট নাড়তে থাকুন।
৩. হারিসা সস ও কাবুলি ছোলা দিয়ে নাড়ুন। লবন ও ২ তেবিলচামচ পানি দিয়ে ৬-৮ মিনিট খুব অল্প তাপে ফুটান।
৪. পালং ও অন্যান্য শাক দিয়ে একটু নেড়ে-চেড়ে নামিয়ে নিন।
৫. ওভেন ৩৫০ ডিগ্রি ফারেনহাইটে প্রিহিট করুন।
৬. দুটি অভেনপ্রুফ বাটিতে রান্না করা কাবুলি ভাগ করে নিন।
৭. প্রতিটি বাটিতে দুই বা তিনটি জায়গা করে ডিম ভেঙ্গে দিন।
৮. ১২-১৫ মিনিট বা ডিম পছন্দ অনুযায়ি সিদ্ধ হলে ওভেন থেকে বের করে নিন। ওভেনে বেক না করতে চাইলে চুলায় কাবুলি দিয়ে চার বা ছয়টি জায়গা করে ডিম ভেঙ্গে দিন এবং চুলায় রান্না করুন।
৯. পাউরুটি বা পিটা ব্রেড দিয়ে গরম গরম পরিবেশন করুন।
প্রয়োজনিও কিছু টিপস্ এর জন্যে দয়াকরে আটির্কেল অথবা ইংরেজি রেসিপির নোট সেকশনটা একটু দেখে নেবেন।
