There is a universal appeal of roasted chicken for its comforting nature. Baked chicken dinners are a weeknight favorite in my family. Juicy, tender roasted chicken is time saving and hard to resist after a long day. Also, baked chicken recipes are a low-maintenance and a healthier dinner option. A comforting dish you will always want to come back to over and over. With clementine in season, this is the perfect time to try this roasted chicken recipe using some citrus flavor from clementines. Feel free to substitute clementine with orange, tangerine or the likes.
When it comes to cooking and buying meat, I always chose Halal, meaning permissible. When choosing meat, I also look for all natural, 100% vegetarian fed, antibiotic free, preservative free, hormone free meat products. I know it is a tall order but it is not an unreasonable one. All these became even more important to us about 4 years ago when I was pregnant. When we wanted to fully convert to all natural meat, I came across Crescent Foods and never turned back. Like all my other chicken recipes, this Spiced Roasted Chicken is also prepared using Crescent Chicken.
A couple of simple ingredients and great chicken like the ones from Crescent is all you need to make this recipe. With no-fuss preparation, this roasted chicken with clementine is the juiciest recipe ever.

- 4 pieces medium sized chicken leg quarters
- 4-5 clementine (or orange)
- 1 teaspoon coriander
- 1 teaspoon black peppercorn
- 1 teaspoon fennel (mouri)
- 1 teaspoon red chili flake
- 1 teaspoon salt
- 5-6 garlic cloves, chopped
- ½ cup onion, sliced
- 2 tablespoon oil
- Pre-heat oven to 375 degrees Fahrenheit.
- Clean and drain chicken pieces.
- Make juice from two clementine, about half a cup. Add the oil to the juice and sprinkle on chicken in a baking dish.
- Take coriander through fennel (mouri) and dry roast in medium low heat for few 2-3 minutes or until aromatic.
- Coarsely grind (do not make it a powder) the spices.
- Add the chili flakes and salts to the spice blend. Rub the dry spices mix on the leg quarters and marinade in the refrigerator for at least 30 minutes to few hours.
- Sprinkle the chopped garlic and onion slices.
- Slice the remaining clementines and layer over the chicken pieces.
- Bake for 35-40 minutes or until chicken is cooked and form a golden color on the outer skin.

রেসিপিঃ কমলার রসে স্পাইসড চিকেন
উপকরনঃ
৪ টুকরা মাঝারি মাপের মুরগির রান ও থানের অংশ
৪-৫টি ক্লেমেন্টিন বা কমলা
১ চা চামচ ধনে
১ চা চামচ গোলমরিচ
১ চা চামচ মৌরি
১ চা চামচ শুকনা মরিচের গুড়া
১ চা চামচ লবণ
৫-৬ টি রসুন কোয়া, কুচি করে কাটা
১/২ কাপ পেঁয়াজ, স্লাইস করে কাটা
২ টেবিল চামচ তেল
প্রস্তুত প্রণালীঃ
১। ৩৫০ডিগ্রী ফারেনহাইটে ওভেন প্রিহিট করুন।
২। ভালো করে চিকেন পিস গুলো ধুয়ে পরিষ্কার করে পানি ঝরিয়ে একটি বেকিং ডিসে রাখুন।
৩। ২টি ক্লেমেন্টিন বা কমলা থেকে ১/২ কাঁপের মত জুস তৈরি করুন। জুসে তেল মিশিয়ে বেকিং ডিশের চিকেন গুলোর উপর ঢেলে দিন।
৪। ধনে, গোল মরিচ এবং মৌরি অল্প তাপে ২ থেকে ৩ মিনিট টেলে নিন।
৫। মশলা গুলো একটু গুড়া করে নিন। মসলার গুড়া খুব মসৃণ না হলেও চলবে।
৬। গুড়া মশলায় শুকনা মরিচের গুড়া এবং লবন মিশিয়ে মুরগির পিস গুলোতে ভালভাবে মাখিয়ে মেরিনেড করার জন্য রেফ্রিজারেটরে কমপক্ষে ৩০ মিনিট বা কয়েক ঘণ্টা রেখে দিন।
৭। চিকেন মেরিনেড হলে রসুন এবং পেঁয়াজ দিন। বাকী ক্লেমেন্টিন বা কমলা স্লাইস করে মুরগির উপর বিছিয়ে দিন।
৮। ওভেনে ৩৫ থেকে ৪০ মিনিট বা যতক্ষণ না চিকেন সিদ্ধ হয়ে বাইরের অংশটি সোনালি হয় ততক্ষণ বেক করুন।
প্রয়োজনিও কিছু টিপস্ এর জন্যে দয়াকরে আটির্কেল অথবা ইংরেজি রেসিপির নোট সেকশনটা একটু দেখে নেবেন।

There are many Halal butcher shop where I live, but not all of them carry Crescent, so we switched store about 4 years ago. Haven’t bought anything but Crescent for the last 4 years. Thanks, Farhana.

It’s always a struggle with halal meat. We had awesome halal organic chicken at Costco and then the public made a huge ruckus about selling out to Muslims, and so of course now, it’s not available anymore. Oh well. I have to hunt down Crescent here, it’s always frozen and you know how good our shop keepers are 😉
Anyway, roast chicken is a weekly thing at our house. This clementine version sounds delicious!

Good to see you around, Nazneen. Through our musallah, we got Crescent chicken in our neighborhood walmart which is convenient. However, I don’t mind the regular 30 minute drive to get our chicken from the trusted butcher we’ve been going to for about 10+ years. As for Costco, I get halal lamb from there but don’t think I’ve ever seen halal chicken. Thanks for stopping by, my friend.
