My love affair with hummus is not a secret. It was a love at first taste. Is it wrong? But the beige chickpea dip feels(and tastes) so right! It’s healthy, it’s flavorful, it’s protein rich and last but not least it’s filling. I just can’t get enough of it, so I go around finding great ways to use the famous Middle Eastern mezze. I can eat hummus all day long.
You’ve already seen the vibrant, colorful and flavorful Middle Eastern tart with hummus. Another cool way to eat hummus is to pair the creamy chickpea spread in mini phyllo shells with kofta. The unexpected crunch of the mini phyllo cups and the kofta adds texture and deep flavor to Hummus.
Whilst Hummus is great as is, the popular Middle Eastern dip brings out flavors and really shines when eaten with other foods. In this case, the kabob in a fun bite size tart. Two classic Middle Eastern dishes, Hummus and Kofta, mashed into one deliciously good appetizer. These tasty and easy little phyllo bites are perfect for entertaining or healthy snacking. So clever! So easy! A Fun appetizer! A healthy snack! A must try!

- 30 Athens mini fillo shells (2 boxes), defrosted
- ½ to ¾ cup store brought or homemade hummus
- 30 mini kofta or your favorite meatballs
- Parsley or mint, for garnish
- FOR HOMEMADE KOFTA
- 2 lbs ground lamb
- 1 tablespoon ground cumin
- 2 teaspoon ground coriander
- 1 onion, finely chopped
- 3 cloves of garlic, crushed
- Juice and zest of 1 lemon
- Salt and freshly ground pepper
- Handful each of mint, parsley and coriander
- 1 egg
- Oil for frying
- Pipe or spoon fill each phyllo shell with about a teaspoon hummus.
- Add a kofta on each shell.
- Garnish with your choice of herbs and serve.
- TO MAKE THE KOFTA -
- Place the cumin and coriander into a dry frying pan and lightly toast the spices for a minute or two until fragrant. Crush using a mortal and pestle or coffee grinder.
- Place all of the ingredients into a bowl and mix well. You may use your hand or your mixer’s dough hooks to mix the ingredients.
- Form small meatballs. Set aside to rest in the refrigerator for 15 minutes.
- Heat a little oil in a frying pan and gently fry the koftas for a few minutes on each side or until well browned and cooked through.
The prep time and cook time given assumes that the hummus and the koftas are pre-made.

উপকরনঃ
৩০টি মিনি ফাইলো শেল (২ দুটো বক্স)
১/২ থেকে ৩/৪ কাপ ঘরে তৈরি বা দোকানের কেনা হামাস
৩০টি মিনি কোফতা অথবা মিটবল ( পছন্দ অনুযায়ী)
পারস্লি অথবা পুদিনা পাতা, সাজানোর জন্য
প্রস্তুত প্রণালীঃ
১। ফ্রস্টিং ব্যাগ অথবা চা চামচ দিয়ে প্রত্যেকটি ফাইলো শেল হামাস দিয়ে পূরণ করুন।
২। প্রতিটি শেলে হামাসের উপর একটি করে কোফতা দিন।
৩। আপনার পছন্দ অনুযায়ি পুদিনা পাতা, ধনে পাতা বা পারস্লি উপড়ে দিয়ে পরিবেশন করুন।
প্রয়োজনিও কিছু টিপস্ এর জন্যে দয়াকরে আটির্কেল অথবা ইংরেজি রেসিপির নোট সেকশনটা একটু দেখে নেবেন।
