Spring is prime season for farm-fresh greens. This salad is perfect to try with any of your favorite spring greens. A light, refreshing, low in calorie salad featuring shrimp + mango + spring greens. What’s not to love? While mangoes don’t typically grow in the US, their peak season runs from April through June in the equatorial climes where they’re harvested.

Sautéed scallion is an excellent side dish to serve this spring with white rice or roti. It’s quick and easy and takes less than half an hour to cook which frees you up to tackle and enjoy life.

A quick and healthy stir-fry that can be made in about 10 minutes. Available year round, but bok choy is perfect to enjoy during Spring with arrays of other greens.

For Hawaiian pineapples, the peak season generally comes in April and May, but they’re available year round. The jam is perfect for spreading on a toast, to glaze a cake or use as the jam filling to make the ever so popular pineapple tarts or cupcakes. It’s great with grilled seafood or meat also. My favorite way has always been to spread on a toast.

Zesty, sweet, sour, spicy; simple yet delicious. The popular radish chutney is a great side to pair with a weeknight main-dish. Although radishes are available year-round, it’s during Spring and Summer months when one can truly appreciate them for their crisp texture and spicy, juicy bite.
