Heat sesame oil and add onion. Saute for 2-3 minutes and add the sliced ginger.
Put the broth, salt in the mix and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-15-minutes.
Add the dumplings, cook for 3 minutes, stir in the scallions(if using).
Add in the spinach and cook until the greens wilt, about 1 minute.
Sprinkle black pepper.
Divide among warm bowls and serve.

I use frozen shrimp gyoza from Trader Joe's You can also add 1 cup thinly sliced carrots
