Quick and Easy Dumpling Soup

Easy dumpling soup using frozen gyoza.

Ingredients
  • 2 teaspoons sesame oil
  • 2 tablespoon chopped onion
  • 1 2-inch piece fresh ginger, peeled and julienned
  • 6 cups chicken or vegetable stock
  • Pinch of salt
  • 16 frozen shrimp dumpling or Gyoza
  • 4 cups baby spinach
  • 3 scallions (green parts), thinly sliced (optional)
  • freshly ground black pepper
Instructions
  1. Heat sesame oil and add onion. Saute for 2-3 minutes and add the sliced ginger.
  2. Put the broth, salt in the mix and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-15-minutes.
  3. Add the dumplings, cook for 3 minutes, stir in the scallions(if using).
  4. Add in the spinach and cook until the greens wilt, about 1 minute.
  5. Sprinkle black pepper.
  6. Divide among warm bowls and serve.
Notes
I use frozen shrimp gyoza from Trader Joe's
You can also add 1 cup thinly sliced carrots
