No cook, easy to make, creamy, smooth, all natural date truffles. Stores well in the refrigetor for 2+ weeks.

Ingredients
  • 2 cups pitted dates
  • 2 cups slivered almonds, toasted
  • 2 tablespoons honey
  • 1 cup desiccated coconut (unsweetened)
  • ½ cup sesame seeds (optional)
Instructions
  1. Set aside ½ cup of coconut in a shallow bowl.
  2. Combine all other ingredients in a food processor and pulse scrapping the sides as necessary until soft dough is formed.
  3. Shape the mixture into balls.
  4. Roll the balls in the set aside coconut.
Notes
The recipe works best with juicy, plump dates. If your dates are little on the drier side, soak them in hot water for 30 minutes.
Adjust the honey quantity according to taste and sweetness of the dates.
Store leftover truffles in airtight container in the fridge for up to 2 weeks.
