Ingredients
  • 2 lb tomatillos
  • 1 medium onion, sliced
  • 1 cup cilantro, chopped
  • 6-8 garlic cloves
  • 2-3 Serrano peppers
  • ¼ cup chicken or vegetable broth
  • 1 tablespoon olive oil (optional)
  • Salt to taste
Instructions
  1. Remove papery husks from tomatillos, rinse and cut in halves.
  2. Place garlic cloves and tomatillos cut side down on a foil-lined baking sheet.
  3. Broil for about 5-7 minutes to lightly blacken the skin.
  4. Place broiled tomatillos and all other ingredients in a blender or food processor and pulse until everything is finely chopped and puree like.
Notes
To achieve a thicker or thinner consistency, adjust broth quantity.
The tomatillos can be pan roasted instead of broiling. For pan roasting, coat a skillet with a little oil. Place tomatillos in the pan and sear on one side, then flip over and brown on the other side on high heat.
