Ingredients
  • 1½ cup flour
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • ½ cup butter
  • 4 tablespoon ice water
  • 1 cup cold milk
  • 1 cup hot milk
  • 1 egg
  • ½ cup sugar
  • 3 teaspoon cornstarch
  • 3-4 drop vanilla
  • 2 cinnamon sticks, ½ inch each
  • 1 mango
  • 20-25 raspberries
  • 20-25 grapes
  • lemon juice (optional)
Instructions
  1. Steps to prepare the pie crust:
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Grease a pie dish or a deep cake pan.
  4. Mix the flour, salt and sugar in a bowl.
  5. Add butter to the mix and make coarse crumbles.
  6. Add water and make dough.
  7. Wrap the dough with a plastic wrapper and set aside in refrigerator for at least 30 minutes or until you are ready to bake.
  8. When ready, take out the dough and roll it into a round shape.
  9. Add the round shaped pastry over the baking dish. Cover the bottom and sides of the dish. Nip out the excess dough.
  10. Pierce the bottom with a fork in several places.
  11. Bake for 20-25 minutes or until the crust is lightly golden.
  12. Cool down completely before filling.
  13. Steps to prepare the custard:
  14. Whisk together egg, cornstarch and sugar in a heavy bottom pan.
  15. Slowly add the hot milk over medium-low temperature. Add cinnamon.
  16. Stir constantly as the custard thickens. Add vanilla.
  17. Turn off the heat before milk comes to a boil.
  18. Stir the custard until it cools down. You may speed up the cooling process by dipping the bowl in ice-cold water for a while.
  19. When cool, place the bowl in the refrigerator.
  20. Steps to assemble the pie:
  21. When ready to fill and serve the pie, wash, peel and cut the mango.
  22. Spread the custard with over the pie crust.
  23. Sprinkle lemon juice on fruit (optional).
  24. Add the fruits.
Notes
The exact amount of water depends on the quality of flour and surrounding atmosphere. Add more water by ½ tablespoonful if dough is dry.
Using a food processor may make it easier to make the dough.
Use any other fruits of your choice such as peach, plum, strawberry, etc.
