Step by step recipe of Frittata Di Spaghetti. Use any shape of pasta, serve hot, cold or at room temperature. A perfect food for picnic, cookout and brunch.

Ingredients
  • 4 oz spaghetti, cooked
  • 4 large eggs
  • 1 cup eggplant, chopped
  • ½cup sun dried tomato, chopped
  • 4 oz mozzarella, shredded
  • ½ cup basil, chopped
  • 1 garlic clove
  • Salt, according to taste
  • Black pepper, according to taste
  • 4 tablespoon olive oil
Instructions
  1. Set water to boil and cook pasta. Drain the water through a sieve.
  2. In a nonstick frying pan, heat 2 tablespoon oil.
  3. Add garlic, and eggplant and sauté until eggplants are semi soft. Set aside.
  4. In a large bowl, beat eggs. Season with salt and pepper.
  5. Add basil, spaghetti and mix well.
  6. In the same nonstick pan, heat the remaining oil over medium heat and swirl around to coat the pan.
  7. Add half the pasta and spread evenly in the pan.
  8. Layer in shredded cheese, chopped sun-dried tomato, eggplant.
  9. Cover cheese, tomato, and eggplant with remaining pasta.
  10. Cook over low-medium heat for 5 - 8 minutes, or until a crust forms at the bottom of the frittata.
  11. Turn the frittata by gripping the handle of the pan with one hand and placing a plate on top and by flipping the pan on to the plate.
  12. Slide the frittata back into the pan from the plate and cook the other side for another 5 - 8 minutes, until it browns.
Notes
Can be served hot, warm or at room temperature.
The frittata can also be broiled for 5-8 minutes after the flip.
Linguini, macaroni or any other shaped pasta can be used in place of spaghetti.
You may use left over pasta with or without sauce for the frittata.
Parsley will also be great in place of basil.
Be cautious when flipping the frittata to avoid burns.
