Ingredients
DRESSING
⅓ cup lemon juice
1 tablespoon honey
1 ½ tablespoon vinegar
1 teaspoon roasted crushed red chili
¼ teaspoon salt
1 tablespoon olive oil
1 tablespoon water
2 tablespoons carrot, minced
1 garlic clove, minced
¼ teaspoon jalapeno (optional)
SALAD
½ lb Shrimp
1 tablespoon lemon juice
Salt, according to taste
Salad greens
Sweet and sour dressing
Mango cubes
Instructions
STEPS FOR DRESSING
Roast red chili, crush and set aside 1 tablespoon.
Mix all ingredients and shake well.
STEPS FOR SALAD
Mix shrimp, lemon juice and salt.
In a non-stick pan, cook for 3-4 minutes or until cooked. Cool.
In a bowl, take the remaining ingredients to your heart's content.
Toss some shrimp and savor.
Notes
The dressing can be kept in the refrigerator for about a week. Adjust dressing chili according to taste. Fresh mint to the salad adds a refreshing change if you like.
