A light, refreshing, low in calorie salad featuring shrimp + mango + spring greens.

Ingredients
  • DRESSING
  • ⅓ cup lemon juice
  • 1 tablespoon honey
  • 1 ½ tablespoon vinegar
  • 1 teaspoon roasted crushed red chili
  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 2 tablespoons carrot, minced
  • 1 garlic clove, minced
  • ¼ teaspoon jalapeno (optional)
  • SALAD
  • ½ lb Shrimp
  • 1 tablespoon lemon juice
  • Salt, according to taste
  • Salad greens
  • Sweet and sour dressing
  • Mango cubes
Instructions
  1. STEPS FOR DRESSING
  2. Roast red chili, crush and set aside 1 tablespoon.
  3. Mix all ingredients and shake well.
  4. STEPS FOR SALAD
  5. Mix shrimp, lemon juice and salt.
  6. In a non-stick pan, cook for 3-4 minutes or until cooked. Cool.
  7. In a bowl, take the remaining ingredients to your heart's content.
  8. Toss some shrimp and savor.
Notes
The dressing can be kept in the refrigerator for about a week.
Adjust dressing chili according to taste.
Fresh mint to the salad adds a refreshing change if you like.
