Ingredients
  • 1 bunch spinach
  • 1 green chili
  • 1 garlic clove, chopped
  • 2 table spoon onion, chopped
  • 2 tablespoon olive oil
  • 1 lb boneless fish fillets of your choice (Tilapia, Mahi Mahi, Cod and Snapper, etc.), about 2 fillets
  • 1 teaspoon cumin powder
  • ½ teaspoon paprika
  • 1 teaspoon garlic paste
  • ½ teaspoon turmeric powder
  • 2 tablespoon lemon juice
  • Salt, according to taste
Instructions
  1. Steps to cook spinach:
  2. Add 1 tablespoon oil on a non-stick pan.
  3. Add chopped garlic, green chili and onion. Cook until slightly golden.
  4. Add spinach and salt.
  5. Saute for 3-4 minutes until spinach is wilted.
  6. Spread spinach on a platter. Set aside.
  7. Steps to cook fish:
  8. Make a spice paste with cumin, paprika, garlic paste, turmeric powder, salt and lemon juice.
  9. Rub the spice paste generously on each side of the fish fillets.
  10. Add 2 tablespoons oil on the same pan where spinach was cooked.
  11. Sear the fillets on medium high heat turning once. About 5-6 minutes each side.
  12. Once done, serve over cooked spinach.
Notes
Adjust the spices according to taste.
You may bake the fish fillets for 15-20 minutes at 350 degree Fahrenheit instead of pan frying.
Adjust heat so the fillets do not burn.
