A berrylicious shortbread recipe to celebrate 4th of July. The red and blue berries and white cheese spread makes a perfect red, white and blue dessert.

Ingredients
  • 1 ½ cups flour
  • ¼ cup sugar
  • ¼ teaspoon salt
  • ¾ cups butter
  • 2 tablespoon water
  • 2 tablespoon milk
  • 1 tablespoon lemon juice
  • 3 oz creem cheese
  • 2 tablespoon yogurt (preferably greek yogurt)
  • Berries and fruits of your choice
Instructions
  1. Steps to make shortbread:
  2. Pre-heat oven to 350 Fahrenheit. Line a cookie sheet with parchment paper.
  3. Mix flour, sugar and salt.
  4. Cut butter into small chunks.
  5. Mix butter with dry ingredients to get a crumbly texture.
  6. Add milk and lemon juice.
  7. Add water, one teaspoon at a time to get a semi soft dough.
  8. Roll into a round, square or oval shape.
  9. Bake 12-15 minutes.
  10. Cool the shortbread completely.
  11. Steps to prepare cheese spread:
  12. Whisk cheese in a bowl with a spoon.
  13. Add yogurt and mix well to get a creamy consistency.
  14. Steps to assemble shortbread:
  15. Layer the cream cheese spread.
  16. Sprinkle berries or fruit of your choice.
Notes
The dough should be soft but not rubbery. Adjust water quantity if needed.
Due to the low quantity, I didn’t use a mixer to whisk the cheese but used a spoon instead.
Dry the berries with paper towel before adding on the shortbread.
You may opt the milk and adjust the liquid quantity with water.
