All natural green velvet cupcake recipe.

Ingredients
  • 2 cups (packed) fresh spinach (about 4 ounce, ½ cup puree)
  • 2 tablespoon freshly squeezed lemon juice
  • ½ cup extra virgin olive oil
  • 2 eggs
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoons pure vanilla extract
  • 8 fresh raspberries (optional)
  • 1 tablespoon confectioner's sugar (optional)
Instructions
  1. Steps to make puree:
  2. Wash and chop spinach. Discard stems if too long or thick.
  3. Place in a food processor or blender. Add lemon juice, olive oil and make a silky, smooth puree. Set aside.
  4. Steps to make cupcake:
  5. Preheat oven to 350 degrees Fahrenheit.
  6. Line or grease a 8 cup muffin tray.
  7. Combine the flour, baking powder and salt. Set aside.
  8. Beat eggs and sugar until light in color.
  9. Fold in spinach puree and vanilla. Mix well.
  10. Slowly add flour mixture to the wet ingredients.
  11. Pour batter into prepared cupcake tray.
  12. Bake 15 minutes or until a skew comes out clean when inserted in the center of a cupcake.
  13. Frost top of cake with the all natural red frosting (recipe below).
  14. Coat raspberries with confectioner's sugar. Place on top of frosting. (Optional)
Notes
You may have to stop the blender/food processor every few seconds and unpack the unblended spinach from the bottom of the blade.
Depending on the oven temperature, baking time may vary.
To achieve the best color, make the spinach puree as smooth as possible.
