Quick and Easy Shrimp and Tofu Stir-fry

Healthy, delicious, amazingly tasty stir-fry for the busy weeknights in less than half and hour.

Ingredients
  • 1 package (14 oz) firm tofu
  • 3 tablespoon oil (preferably sesame oil)
  • 3 tablespoon low sodium Soy Sauce
  • 1 tablespoon brown sugar
  • ½ teaspoon crushed red pepper
  • 2-3 garlic cloves
  • 1 medium onion, sliced
  • ½ lb. Shrimp
  • ½ lb mushroom, sliced
  • 3 colored bell peppers/Capsicums, sliced
  • 1 Jalapeno Pepper, cut into 4-5 big chunks
  • salt, according to taste
  • 1 sprig basil
Instructions
  1. Steps to cook Tofu:
  2. Drain tofu and pat dry with a paper towel.
  3. Cut into one square inch pieces and set aside in a bowl.
  4. Mix 2 tablespoons soy sauce, brown sugar and crushed pepper.
  5. Pour over tofu and marinate for about 10 minutes.
  6. Heat 2 tablespoon oil in a non stick pan.
  7. Pan fry tofu pieces saving the marinade for later use.
  8. Steps to cook stir fry:
  9. Prou remaining oil to the pan.
  10. Add garlic and sauté till fragrant.
  11. Toss Onion.
  12. Sprinkle the shrimp and cook for 1-2 minutes.
  13. Add the mushrooms. Cook 2-3 minutes.
  14. Add sliced bell pepper. Pour the saved marinade from tofu and remaining soy sauce, salt and jalapeno.
  15. Throw the basil in the pan and cook another 2-3 minutes mixing all ingredients.
  16. Add tofu pieces and cook for another minute mixing all ingredients.
  17. Serve hot.
Notes
Gather all ingredients before starting to cook.
Drain all water after washing the vegetables ahead of time to ensure that they are not too wet.
For even cooking, cut all ingredients same size.
Adjust crushed pepper and Jalapeno according to taste.
You may add more soy sauce and/or brown sugar if you like.
Slice mushroom, bell peppers and jalapeno while tofu is marinating to save time. You can even multitask to start cooking while cutting the vegetables, which will save you even more time.
