Okra dolma a.k.a spicy stuffed okra recipe is a stuffed okra recipe. The combinations of ingredients that go into the stuffing are extremely flavorful.

Ingredients
  • 25-30 tender and small okra
  • 4-5 dry red chilies
  • 1 tablespoon coriander
  • 1 tablespoon cumin seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon sesame seeds
  • 2 tablespoon desiccated coconut
  • 2 tablespoon cashews
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon besan(gram flour)
  • 1 tablespoon garlic paste
  • ½ cup onion, sliced
  • 2 tablespoon oil
Instructions
  1. Wash all the okras and pat dry with a kitchen towel.
  2. Trim the head and tail part of the okras and make a slit lengthwise in a way that each okra has a space for the stuffing.
  3. Make the stuffing by grinding the spices from coriander to salt. Add besan and garlic paste to the assortment and mix well.
  4. Fill each okra with stuffing.
  5. Heat oil in a pan and add onions. Fry onions until fragrant and slightly golden.
  6. Gently place all the stuffed Okras in the pan and spread them in a single layer. Add any leftover stuffing in the pan. Stir the okras gently making sure the stuffing is not coming out from the Okras.
  7. Close the pan with a lid and let it cook on low heat. Gently, turn the okras every few minutes to allow even cooking on all sides.
  8. Slow roasting the okra until tender and ready to eat. May take 20-25 minutes.
Notes
Adjust salt, chili and other spices according to taste.
Serve over rice or with ruti/flatbread.
