Jewel Pilaf - Delicious and Easy Kid Friendly Rice

Tried and tested, slightly sweet, a bit tart flavored rice for kids. The brilliant golden raisins, fiery red ruby like cranberries, amber colored apricots make this rice a dazzling addition to a kid’s menu.

Ingredients
2 tablespoon butter or oil
1 tablespoon onion, sliced
1 green cardamom (optional)
1 small piece of cinnamon (optional)
½ cup rice
½ teaspoon salt or according to taste
1 cup hot water
½ cup dried jewel fruits, cut into pieces (apricot, golden raisin, cranberry)
Instructions
Wash rice and drain all water.
In a deep pan, heat butter or oil. Add the onion slices and fry till slightly golden.
Add rice, cardamom, cinnamon and fry about 1-2 minutes.
Add salt and the hot water. At the sight of the first bubble, reduce heat to low.
Add the fruits, cover the pan and cook until desired softness is achieved depending on your child’s taste.
Notes
Notes: Feel free to add a green chili if your child can tolerate. Cut the dried fruits in small pieces so your child can safely chew. Depending on your child’s age, if you need to make the rice extra mushy, you can add additional ½ cup of water. The rice can be stored in the refrigerator for 3-4 days. Feel free to add other fruits and vegetables per liking such as green peas, carrot cubes, corn, etc.
