Marinara sauce recipe, the answer to all of your pasta, pizza, garlic bread dipping sauce. Roasting the tomatoes concentrates the flavor in the tomatoes. This results in a much heartier sauce than marinara sauce recipes calling for canned tomatoes.

  • 4 pounds ripe tomatoes, halved lengthwise
  • 6 tablespoon extra-virgin olive oil, divided
  • 6-7 garlic cloves, crushed
  • 1 large sprig of fresh basil
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • 1 tablespoon vinegar
Instructions
  1. Pre-heat oven to 450 degrees Fahrenheit. Sprinkle 2 tablespoon oil and roast tomato halves, cut sides up, for 20 minutes or until they begin to brown.
  2. In a skillet, heat remaining oil over medium-high heat.
  3. Add garlic and sauté 5 minutes or until tender.
  4. Stir in tomato and bring to a boil.
  5. Place basil sprig on the surface. Submerge basil when wilted in sauce. Cover, reduce heat, and simmer 15 minutes or until thickened and oil on surface is a deep orange, stirring occasionally.
  6. Add red pepper flakes, vinegar, and salt. Stir.
  7. Discard basil. Check and adjust seasoning.
  8. Cool completely before putting in a jar to store.
Notes
Roasting the tomatoes concentrates the flavor in the tomatoes and results in a heartier sauce.
Make a variation of the sauce by adding a splash of heavy whipping cream to make a more creamier flavor.
You can vary the flavor by adding parsley, thyme, or oregano to the sauce.
The sauce can be stored in refrigerator for up to three months and in freezer for 6 months.
The tomatoes I used were very sweet. If you like, you can add a teaspoon of sugar to the recipe.
