Bite size candied pumpkin is meltingly soft, flavorful fall treats. Once you taste it, you will never go back to pumpkin pie.

Ingredients
12 pieces of pumpkin squares, about 1” cubes
2 tablespoon ghee or butter
1 tablespoon sugar
4 tablespoon water
1-2 green cardamom
1 cinnamon stick, about 1” long
Ground pistachio for garnish
Instructions
Wash and dry the pumpkin squares.
Melt the ghee or butter in a small non stick pan. In medium-low heat, Fry all sides of the pumpkin cubes for about 6-8 minutes or until all sides are slightly golden. Set aside the fried pumpkin squares.
In the same pan, make the syrup by combining the sugar, water, cardamom and cinnamon.
Once the syrup boils, add the fried pumpkin pieces and simmer for 8-10 minutes in low heat until soft.
Garnish with pistachio and serve.
Notes
You may fry the pumpkin pieces ahead of time up to a day earlier and store in refrigerator. The candied pumpkin dessert is best served warm.
