Flavor packed restaurant style whole fish recipe. A gorgeous and delicious way to prepare pomfret at home.

Ingredients
  • 1 medium pomfret fish, gutted
  • 2 teaspoon salt, divided
  • 3 tablespoons freshly squeezed lemon Juice
  • ½ cup water
  • 3 garlic cloves, minced
  • 1 inch ginger, peeled and sliced
  • 1 teaspoon brown sugar
  • 2 red chili, chopped
  • 2 tablespoon Fish Sauce (optional)
  • 1 Roma tomato, chopped
  • 1 red bell pepper, chopped
  • ½ cup water
  • 2 tablespoon oil
  • 1 medium onion, sliced
  • Cilantro and spring onion (sliced), for garnish
Instructions
  1. Prepare the fish by cleaning the fish thoroughly, specially the inner cavity. Rub some salt and 1 tablespoon lemon juice on the fish. Set aside for 5-10 minutes. Wash off the salt and lemon juice. This step should eliminate any foul smell that the fish may have.
  2. Score across the fish body on both sides. Sprinkle some salt over and inside fish and set aside while you prepare the sauce.
  3. Mix remaining lemon juice, garlic, ginger, sugar, red chilli, and fish sauce together. Add salt.
  4. Heat oil on medium and sauté onion until translucent. Sprinkle the chopped tomato and red pepper. Pour the sauce and simmer about a minute.
  5. Add the fish and turn the heat to medium-low.
  6. Let the fish cook for about 8-10 minutes on each side. To turn the fish, slowly scrape the bottom of the pan to loosen the fish. If the fish is ready, it should be very easy to loosen the fish.
  7. To serve, plate the fish and pour the sauce over it. Garnish with cilantro, scallion, and wedges of lime.
Notes
Don't flip the fish too early, or the skin will stick to the pan.
Adjust chili and other spices according to taste.
The cooking time may differ slightly depending on the size of the fish.
Don’t overload your pan. Allow plenty of room so that the fish is not crowded in the pan.
