Delicious suji halua a.k.a sooji halwa gets a make over with saffron and rose water. চিরচেনা সুজির হালুয়ার স্বাদে ভিন্নতা খুব সহজেই।

Ingredients
  • 1¼ cup sugar
  • 2½ cups water
  • 3-4 green cardamom
  • 1-2 cinammon stick, about 1inch each
  • 1 bayleaf
  • ¼ teaspoon saffron
  • Pinch of saffron food color (optional)
  • 2 tablespoon rose water
  • ½ cup ghee
  • 1 cup suji a.k.a semolina
  • Crushed pistachio for garnish
Instructions
  1. Make syrup by combining sugar, water, cardamom, cinnamon, bayleaf and saffron in a small pot in medium heat. Bring to a boil, add food color if using. Remove from heat as the sugar melts. Add the rosewater and mix well. Set aside the syrup.
  2. On medium heat, melt the ghee in a non-stick pan. Add the semolina/suji and fry about 3-4 minutes until suji is slightly golden.
  3. Gradually add the syrup to the hot suji and stir consistently and quickly for about 3-4 minutes in medium heat.
  4. Continue to stir until all lumps are smoothen out and ghee separates from the halwa. About 1-2 minutes.
  5. Lay the halwa in a flat tray and cut into fun shapes using the With A Spin Peace line cookie cutters.
  6. Garnish with pistachio.
Notes
If you like very sweet halwa, you may add additional ¼ cup sugar to the syrup.
Take out the spices before serving.
If you like your halwa to be a creamy pudding like consistency, cook 1-2 minutes in step 3 above.
You can also garnish with cashews, raisins, almonds, etc.
