Serves: 20
Ingredients
  • 1 cups unsalted butter (at room temperature)
  • 1 cups sugar
  • 1 large eggs
  • 2¼ cups all-purpose flour
  • ¾ cups cocoa powder
  • ½ teaspoon salt
Instructions
  1. Cream the butter and sugar together in a bowl with an electric mixer on low to medium speed for about a minute and half.
  2. Add egg slowly and mix. Scrape down the bowl with your spatula at least once and mix again.
  3. Sift the dry ingredients together. (Flour, cocoa powder and salt).
  4. Add all of the flour mixture to the bowl. Mix on low speed until dough clumps around.
  5. Roll the dough out between 2 large pieces of parchment paper. Place on a baking sheet and chill in the refrigerator for a minimum of 1 hour.
  6. Roll out the dough further if you need to, and cut out cookie shapes. Place cutout cookies on lined baking sheet. We used With A Spin Islamic shape cookie cutters.
  7. Re-roll scraps and repeat.
  8. Put cookie dough shapes back into the fridge for 10 minutes to 1 hour to chill again so they hold their shape better when baked.
  9. Preheat your oven to 350°F or 176°C.
  10. Bake cookies for 8-12 minutes or until the center of the cookie no longer looks wet.
  11. Let cookies cool to room temperature and decorate!
Notes
Over mixing butter and sugar in the first step will cause too much air to be incorporated into the dough and make light and fluffy cookie, but the dough will spread more during baking. Not ideal if you’d like the cookie to hold its shape.

Cookie baking time depends on thickness and size of cookies. For example, With A Spin star shape cookie cutter will take less time than the masjid cutter due to the cookie cutter size.
