I am going to make this stir-fry as simple as I can for you. No, not because I think you cannot cook(I would never think that) but because I am guessing cooking complicated dishes is the last thing in your mind in the middle of the week. How about a quick and healthy stir-fry that can be made in about 10 minutes!
I don’t know about your weekdays, but mine’s are pretty hectic. Managing a toddler, a career, a household where hubby is out of town Monday through Thursday every week keeps me on my toes all week long. Some week, when there’s nothing left in the refrigerator of what was cooked during the weekend, a bowl of cereal or oatmeal sounds better than trying to cook something for dinner. Off course, the refrigerator doesn’t get empty every week. But when I notice it’s on the lower end I make sure R’s meals are in order for the next day so the nanny knows what’s for breakfast and lunch and mommy has something to feed her during dinner time.
It’s so hard to motivate myself to take even 30 minutes to cook something just for me while trying to feed R dinner, washing the sippy cups, bottles and getting her ready for bedtime all within a very short period of time in the evening.
Then again, I have a few quick go to recipes that can be prepared under 15 minutes which I love and make often(can’t have cereal or oatmeal for dinner every week night, right?). When I have the extra 10 minutes, I sometimes turn to bokchoy and make this simple stir-fry with roasted sesame. This Asian vegetable is also known as pak choi or Chinese cabbage. Bokchoy has a mild sweet flavor that blends well with the nutty taste of sesame oil. This dish is so simple to make, I am not sure this even counts as a recipe. The very first time I had this at a dear friend’s home, I fell in love and have made many times since then. I like it as is but goes very well as a side with rice.
When you are in a crunch how much time do you spend to prepare dinner on a weeknight? Will you take the same amount of time if you were preparing dinner only for yourself?
- 6-8 medium bokchoy, cut in halves
- 1 tablespoon sesame oil
- 2-3 cloves garlic, minced
- 1 tablespoon onion, thinly sliced
- ½ teaspoon red pepper flakes
- 1-2 teaspoon sesame seeds, roasted
- 1 teaspoon soy sauce
- Salt to taste
- Heat oil over medium high.
- Add garlic and onion and sauté until fragrant. About 1-2 minutes.
- Reduce heat to medium and add bokchoy and red pepper flakes.
- Sauté until bokchoy turns dark green. About 4-5 minutes.
- Add salt and soy sauce.
- Garnish with toasted sesame seeds and serve warm.

Believe me.. I know how hectic it can get with a toddler and a job and all I wanted to do was collapse on the couch as soon as he slept. Dinner was the last thing on my mind. The stir fry seems very healthy and a quick weeknight meal.

What a great idea to add sesame seeds! We eat bokchoy once in a while but never thought of sprinkling sesame seeds before. I’ll definitely give this a go!
