Life is busy. Just think about what many of us are responsible for on a given day – managing household duties, going to work, shopping for groceries, preparing and serving meals to our family, doing laundry, paying bills, and much more. I am not even mentioning the full-time mommy job some of us have. The bottom line is everyone is stretched thin and it gets thinner by the day. Where is the time to slow down to celebrate & enjoy daily life, which is so important? Weeknights, where the days are frantic and demanding, call for quick and easy, yet healthy meals. Something that can be on the table in less than 30 minutes and enjoyed.
This week is a hard one for me and it is even harder for my daughter. We lost our nanny and a new one started this week. On top, I started a brand new project at work. This means, there will be a lot of heart breaking cries throughout the house calling out for mommy while mommy will be having silent tears sitting through endless meetings.
Anyway, at the end of the word day, I look forward to lots of hugs and kisses and this pan seared spicy fish fillet with sautéed spinach dinner – done in about 20 minutes from preparation to the table. Leaving me few extra precious minutes to spend with R.
A wide variety of fish fillets can be used and all turn out to be delicious. I have used Tilapia, Mahi Mahi, Cod and Snapper for this recipe depending on what’s in the freezer. I love having just the fish and spinach but hubby loves a side of rice with it.
Oh, that rotten flower in the middle represents the bad week we are having this week due to the nanny transition.
- 1 bunch spinach
- 1 green chili
- 1 garlic clove, chopped
- 2 table spoon onion, chopped
- 2 tablespoon olive oil
- 1 lb boneless fish fillets of your choice (Tilapia, Mahi Mahi, Cod and Snapper, etc.), about 2 fillets
- 1 teaspoon cumin powder
- ½ teaspoon paprika
- 1 teaspoon garlic paste
- ½ teaspoon turmeric powder
- 2 tablespoon lemon juice
- Salt, according to taste
- Steps to cook spinach:
- Add 1 tablespoon oil on a non-stick pan.
- Add chopped garlic, green chili and onion. Cook until slightly golden.
- Add spinach and salt.
- Saute for 3-4 minutes until spinach is wilted.
- Spread spinach on a platter. Set aside.
- Steps to cook fish:
- Make a spice paste with cumin, paprika, garlic paste, turmeric powder, salt and lemon juice.
- Rub the spice paste generously on each side of the fish fillets.
- Add 2 tablespoons oil on the same pan where spinach was cooked.
- Sear the fillets on medium high heat turning once. About 5-6 minutes each side.
- Once done, serve over cooked spinach.
You may bake the fish fillets for 15-20 minutes at 350 degree Fahrenheit instead of pan frying.
Adjust heat so the fillets do not burn.

I hope the new nanny situation is working out for you. I feel like this year was extra busy for me, and all the parents with older kids said this is just a beginning…(what?!). I often dream of just having a cup of coffee at a cafe (ALONE) or sleeping minimum 6 hrs at night. Such a sad dream! Anyhow, your fish looks great! I had a sauteed fish today for lunch, and it can be improved much better. Yours should be replaced the restaurant’s recipe! 🙂
