I hope all of you in the US had a wonderful Thanksgiving and those outside of the US a fabulous weekend. The Monday after Thanksgiving can be a little rough for some. After an extended weekend, fabulous food, time with friends and family, trying to get back to the regular weekly routine can be difficult. Thankfully and hopefully, there were leftovers.
One of my many favorite ways to use leftover meat or vegetables is to make baked hand pies a.k.a. puff pastries a.k.a. samosas. Depending on the leftover, I usually add some pizzazz to it and wrap it up in store bought puff pastry dough. I don’t like throwing away food at all, so making hand pies with leftover is a great option as I do not have to deal with a lot of leftover all at once. I bake as many pastries as I need and freeze the rest. These are so popular amongst my friends and family that I often make the filling from scratch as well. One of my vegetarian filling was featured in PopSugar few months ago.
If you’ve still got some turkey, beans or any other sides left from last week, spice them up a little and make these puff pastries. Adored by both adults and children, these hand pies disappear from the table in a heartbeat.
- 1 lb leftover turkey (or ground chicken or shredded chicken from broth)
- 1 cup onion, sliced
- 1-2 green chili
- ½ teaspoon garam masala
- ½ tea spoon ginger paste
- ½ tea spoon garlic paste
- ¼ teaspoon turmeric powder
- 2 tablespoon oil
- salt, according to taste
- Puff pastry
- 1 egg
- Steps to cook filling:
- Heat oil in a heavy-bottomed frying pan.
- Add ½ cup finely chopped onions, green chili and fry till succulent.
- Add the meat, garam masala, ginger and garlic paste, turmeric and slow cook till the water from the meat almost dries up, stirring occasionally.
- Add salt and remaining onion and slow cook till oil separates and chicken is cooked through.
- Steps to assemble puff pastry:
- Pre heat oven to 350 degrees Fahrenheit.
- If your puff pastry doesn’t come flat, roll out puff pastry to ¼ inch thickness if needed.
- Using a cookie cutter, cut pastry dough to desired shapes.
- Spoon filling in the middle of one piece and close the pastry with another piece.
- Beat egg with one teaspoon water. Brush egg-wash on top of pastry.
- Bake for 12-15 minutes or until golden brown.
Adjust chili and spices according to taste.
Onion should be a bit raw in the filling and fully cooked during the baking process.

১ পাউণ্ড চিকেন, গরু বা টার্কির কিমা বা ঝুড়া মাংস
১ কাপ পেঁয়াজ, স্লাইস
১-২ টি কাঁচা মরিচ
১/২ চা চামচ গরম মশলা
১/২ চা চামচ আদা বাটা
১/২ চা চামচ রসুন বাটা
১/৪ চা চামচ হলুদ গুঁড়া
2 টেবিল চামচ তেল
লবণ, স্বাদ অনুযায়ী
পাফ প্যাস্ট্রির খামির
১টি ডিম
পুর প্রস্তত প্রণালী:
১. একটি ভারী ফ্রাইং প্যানে তেল গরম করুন।
২. ১/২ কাপ কাটা পেঁয়াজ ও কাঁচা মরিচ দিয়ে নাড়ুন।
৩. মাংস, গরম মশলা, আদা বাটা, রসুন বাটা ও হলুদ দিয়ে অল্প আঁচে পানি না শুকানো পর্যন্ত রান্না করুন।
৪. লবণ এবং অবশিষ্ট পেঁয়াজ দিয়ে অল্প আঁচে মাংস থেকে তেল আলাদা না হওয়া পর্যন্ত রান্না করুন।
প্যাটিস প্রস্তত প্রণালী::
১. ওভেন ৩৫০ ডিগ্রী ফারেনহাইটে প্রিহিট করুন।
২. প্যাস্ট্রি খামির ১/৪ ইঞ্চি পুরু করে বেলে নিন।
৩. একটি কুকি কাটার ব্যবহার করে, পছন্দসই আকারে প্যাস্ট্রি খামির কেটে নিন।
৪. প্রতিটি টুকরার মাঝখানে কিছু পুর দিয়ে প্যাস্ট্রি বন্ধ করে নিন।
৫. এক চা চামচ পানি দিয়ে ডিম ফেটুন। প্যাস্ট্রির উপরে ডিমের ওয়াশ ব্রাশ করুন।
6. ওভেনে ১২-১৫ মিনিট বা সোনালী রং না হওয়া পর্যন্ত বেক করুন।
