I love the in between time when season changes. Those of you in the northern hemisphere, are you still relishing the last rays of summer or moving on to fall? For us, here in Texas, it’s not scorching hot anymore but we are still enjoying nature’s warmth. The summer bounties are still plenty but the fall produces are peaking through here and there. I am holding on bit longer and on a mission to preserve some of the summer flavors to relish through the winter months. The supermarkets are overflowing with red, vine ripe, fresh tomatoes so I made a jar of artisan ketchup again. Also made a simple marinara sauce from fresh tomatoes and basil from the herb garden. No canned tomatoes here, yet the recipe is extremely easy to make.
Homemade marinara sauce is made with basic pantry ingredients. The sauce is much easier to make than you think. Olive oil, ripe tomatoes, a substantial portion of garlic, some red pepper flakes or tiny green peppers to make it a bit spicy, handful of basil to make it flavorful. You can add a splash of heavy whipping cream to the pasta sauce if you like to up the sauce to a more creamier flavor. Whatever you do, next time, please can the can and make the pasta sauce with fresh tomatoes.
Marinara sauce, the answer to all of your pasta, pizza, garlic bread dipping sauce. Roasting the tomatoes concentrates the flavor in the tomatoes. This results in a much heartier sauce than hundreds of the other marinara sauce recipes calling for canned tomatoes. Using a skillet instead of a saucepan will allow the sauce to cook evenly and thicken quickly. Sometimes I puree the sauce in a food processor and strain through a sieve. At other times, I leave it as is to get a chunkier sauce.

- Recipe : Roasted Marinara Sauce
- Ingredients:
- 4 pounds ripe tomatoes, halved lengthwise
- 6 tablespoon extra-virgin olive oil, divided
- 6-7 garlic cloves, crushed
- 1 large sprig of fresh basil
- ¼ teaspoon red pepper flakes
- ½ teaspoon salt
- 1 tablespoon vinegar
- Pre-heat oven to 450 degrees Fahrenheit. Sprinkle 2 tablespoon oil and roast tomato halves, cut sides up, for 20 minutes or until they begin to brown.
- In a skillet, heat remaining oil over medium-high heat.
- Add garlic and sauté 5 minutes or until tender.
- Stir in tomato and bring to a boil.
- Place basil sprig on the surface. Submerge basil when wilted in sauce. Cover, reduce heat, and simmer 15 minutes or until thickened and oil on surface is a deep orange, stirring occasionally.
- Add red pepper flakes, vinegar, and salt. Stir.
- Discard basil. Check and adjust seasoning.
- Cool completely before putting in a jar to store.
Make a variation of the sauce by adding a splash of heavy whipping cream to make a more creamier flavor.
You can vary the flavor by adding parsley, thyme, or oregano to the sauce.
The sauce can be stored in refrigerator for up to three months and in freezer for 6 months.
The tomatoes I used were very sweet. If you like, you can add a teaspoon of sugar to the recipe.
রেসিপিঃ মারিনারা সস / পাস্তা সস রেসিপি
উপকরণঃ
৪ পাউন্ড পাকা টমেটো, অর্ধেক করে কাটা
৬ টেবিল চামচ অলিভ তেল
৬-৭টি রসুনের কোয়া, থেঁতলানো
এক গুচ্ছ বেসিল
১/৪ চা চামচ শুকনা মরিচের গুড়া
১/২ চা চামচ লবণ
১ টেবিল চামচ ভিনেগার
প্রস্তুত প্রনালিঃ
১. ওভেন ৪৫০ ডিগ্রী ফারেনহাইটে প্রি-হিট করুন। ২ টেবিল চামচ তেল অর্ধেক করে কাটা টমেটোর উপর ছিটিয়ে ২০ মিনিট বা টমেটো বাদামী না হওয়া পর্যন্ত বেক করুন।
২. মাঝারি উচ্চ তাপে অবশিষ্ট তেল গরম করুন।
৩. রসুন দিয়ে কিছুক্ষণ নাড়ুন, প্রায় ৫ মিনিট।
৪. বেক করা টমেটো দিয়ে ফুটিয়ে নিন।
৫. বেসিল সসের উপর রেখে দিন। তাপে ঝিমিয়ে গেলে সসের ভিতরে ঢুকিয়ে দিন। ঢাকা দিয়ে, চুলার আঁচ কমিয়ে, প্রায় ১৫ মিনিট নাড়ুন।
৬. মরিচ, ভিনেগার এবং লবণ যোগ করুন।
৭. বেসিল পাতা ফেলে দিন। লবণ চেখে দেখুন স্বাদ অনুযায়ী হয়েছে কিনা।
৮. সস ঠাণ্ডা হলে বৈয়ামে ভরে রাখুন।
প্রয়োজনিও কিছু টিপস্ এর জন্যে দয়াকরে আটির্কেল অথবা ইংরেজি রেসিপির নোট সেকশনটা একটু দেখে নেবেন।

As tomatoes are in the dirty dozen list, I always buy organic tomatoes and the grocery store by my house doesn’t always sell the organic pasta sauce, so I make my own during summer.
