Back to Basics – Beresta, Crispy Fried Onion Two Ways

Crispy fried onion or beresta is a basic no batter onion preparation for a lot of Bangladeshi, Indian and Mediterranean cooking. Making beresta, or caramelizing onion to a point until the thinly sliced onions are crispy, is usually the first step in many vegetarian as well as non-vegetarian dishes. The thinly-sliced crispy fried onions are pleasantly flavorful and adds both crunch and flavor to a recipe. Dishes made with beresta gets an aromatic, sweet and smoky taste. Beresta is often used as garnish for biryani, pilaf, rice, meat, and vegetarian recipes too.

Preparing beresta every time a recipe requires for it can be time consuming. Hence, it is a lot easier to make the fried onion in bulk and store in the refrigerator or freezer.

In the US, pre-made beresta is available in many Bangladeshi and Indian grocery stores. However, none of these store brands are as pure as the ones you make at home. Almost all have some kind of flour added to the onions which results in a less aromatic beresta.

Traditionally, beresta is done on stovetop and it is a very hands on preparation as the onions need to be stirred frequently to avoid burning. As you can imagine, it takes time and patience to slowly caramelize finely sliced onion and bring it to a fried and crispy texture. Recently, I have come across an easier method of preparing beresta in microwave in a Facebook group. For me, the almost hands free microwave method is by far the easiest process I have come across. As an added bonus, it uses a lot less oil too. The microwave method doesn’t require me to stand in front of the stove the entire time so with the free time in between I can get some other chores done around the house or the kitchen.

Let’s just be clear that beresta or crispy caramelized onions need more than 10 minutes, lot’s of patience and time is what makes the crispy onions terrific. My mom prefers the traditional method but I am a big fan of the hands free manner these days and storing them for later use.

Thinly-sliced crispy fried onions with a pleasant flavorf. Beresta adds both crunch and flavor to a recipe. Dishes made with beresta gets an aromatic, sweet and smoky taste. Beresta is often used as garnish for biryani, pilaf, rice, meat, and vegetarian recipes too.

Ingredients

• 4 cups onion, finely sliced
• 2 cups oil or ghee

Instructions

1. Traditional Stovetop method
2. In a deep pan, heat oil until it is hot. When oil begins to ripple, it is hot enough.
3. Add the onions. Once it starts boiling, lower the heat to medium.
4. Stir the onion slices frequently for even browning, until they are crispy and golden brown. The frying process will take approximately 45-60 minutes depending on the size and water quantity of the onion slices.
5. Transfer the beresta onto a paper towel to absorb the extra oil. Spread onions as much as you can.
6. Cool the beresta completely before transferring the fried onions to a lidded jar or a zip-lock plastic bag.
8. Hands Free Microwave Method
9. Drain any water out of the onion slices.
10. In a big bowl, mix the onion and oil/ghee together.
11. Microwave the onions for 4 minutes. Take the bowl out of the microwave and stir the onions. Cook for another 4 minutes in the microwave.
12. Next, cook the onions in 2-2.5 minutes intervals and stir in between the intervals.
13. As onion starts to color, reduce the cooking time to 1 minute interval until you get crisp and evenly colored beresta.
14. Transfer the onions onto a paper towel to absorb the extra oil. Spread onions as much as you can.
15. Cool the beresta completely before transferring the fried onions to a lidded jar or a zip-lock plastic bag.

Notes

TRADITIONAL METHOD NOTES:
Slow frying will make the onion very sweet and smoky.
Constantly stir the onions on stovetop to avoid burning.
Carefully stir the onion while frying to evenly color them.
Beresta can be stored in airtight container in refrigerator for up to 2 weeks and in freezer up to 6 weeks.
I use my food processor, which makes this step a lot faster than cutting onion by hand.

রেসিপিঃ বেরেস্তা, চুলায় তৈরি পদ্ধতি

উপকরনঃ
৪ কাপ পেঁয়াজ ( চিকন করে কাটা)
২ কাপ তেল অথবা ঘি

প্রস্তুত প্রণালীঃ
১. একটি ডিপ প্যানে বা কড়াইতে তেল গরম করুন। তেলে ঢেউয়ের মত দেখতে পেলে বুঝে নিবেন তেল যথেষ্ট গরম হয়েছে।
২. এবার তেলে পেঁয়াজ দিন। তেলে পেঁয়াজ ফুটে উঠলে চুলার তাপ কমিয়ে দিন।
৩. বাদামি রঙ এবং মচমচে না হওয়া পর্যন্ত পেঁয়াজ ভাজতে থাকুন। প্রায় ৪৫-৬০ মিনিটের মত অল্প আঁচে ভাজতে হবে।
৪. অতিরিক্ত তেল শুষে নেয়ার জন্য পেঁয়াজ গুলো পেপার টাওয়েলের উপর রাখুন।
৫. বেরেস্তা সম্পূর্ণরূপে ঠাণ্ডা হলে একটি ঢাকনাযুক্ত বয়াম বা একটি জিপ লক প্লাস্টিকের ব্যাগে ভাজা পেঁয়াজ রেখে দিন।

রেসিপিঃ বেরেস্তা, সহজ মাইক্রোওয়েভে পদ্ধতি
উপকরনঃ
৪ কাপ পেঁয়াজ ( চিকন করে কাটা)
১ কাপ তেল অথবা ঘি

প্রস্তুত প্রণালীঃ
১. পেঁয়াজ থেকে পানি ঝরিয়ে ফেলুন।
২. একটি বাটিতে তেল অথবা ঘিয়ের সাথে পেঁয়াজ মেশান।
৩. পেঁয়াজগুলো ৪ মিনিট ম্যাক্রোওয়েভ করুন। তারপরে বাটিটি বের করে পেঁয়াজ গুলো নেড়ে দিন। ৪ মিনিটের জন্য পেঁয়াজ গুলো আবার মাইক্রোওয়েভ করুন।
৪. পরবর্তী ২ থেকে ২.৫ মিনিট অন্তর অন্তর পেয়াজগুলো মাইক্রওয়েভে রান্না করুন এবং নেড়ে দিন।
৫. যেই পেঁয়াজের রঙ ধারন হতে দেখা যায় মাইক্রওয়েভে ১ মিনিট অন্তর বের কড়ে নেড়ে দিন। এভাবে যতক্ষণ না মচমচে এবং বেরেস্তার রঙ আসে, পেঁয়াজ মাইক্রওয়েভে রান্না করুন।
৬. অতিরিক্ত তেল শুষে নেয়ার জন্য বেরেস্তা পেপার টাওয়েলের উপর ছড়িয়ে রাখুন।
৭. বেরেস্তা সম্পূর্ণরূপে ঠাণ্ডা হলে একটি ঢাকনাযুক্ত বয়াম বা একটি জিপ লক প্লাস্টিকের ব্যাগে ভাজা পেঁয়াজ রেখে দিন।
