Soft, light, fluffy and delicious pancakes quickly baked on a tray, in a fraction of the time and effort as regular pancakes. No flipping skills required! What’s not to like about that? I’m all about saving time in the kitchen and squeezing in extra family cuddles with the time saved flipping pancakes. I mean how can you beat that?
I wish I could claim this is an original recipe idea by me. It is not. My 9 year old is big fan of cooking shows and this quick and easy pancake is a recipe adapted from one of her favorite celebrity chef and author Nadiya Hussain. She is a huge fan and memorized many of Nadiya’s cook show dialogs.

This traybake pancake recipe is versatile. It’s easy enough to make ahead the batter night before and bake on a weekday morning, yet so elegant that you can serve during weekend brunch. You can also double to recipe for a crowd. The first time I made the Peanut Butter & Jelly tray bake was on father’s day and it was a huge hit. Did I say I made it for Eid breakfast too and everyone devoured it?
American fruit preserve or jelly can be too sweet so I’ve reduced the amount a bit from Nadiya’s original recipe. I’ve also reduced sugar from the original recipe and this family absolutely loves the easy baked pancake for breakfast.
I’d highly recommend you play with other toppings such as nutella, tahini, walnut, sliced banana or strawberries, blueberries, chocolate chips, etc. We can’t have enough of this unique, quick and easy pancake. I hope you give it a try and let us know how you like it.
- ¾ cup milk
- 2 tablespoons sugar
- 2 eggs
- 2 tablespoon vegetable oil
- 2 cups plain flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons strawberry jelly (or jam of your choice)
- 3 tablespoons chunky peanut butter
- Preheat the oven to 350F. Prep a baking tray (approx. 8x9inch) with spray cooking oil.
- Whisk together the milk, sugar, eggs and oil.
- Shift flour, baking powder, salt into the wet mixture.
- Whisk together until you have a thick batter.
- Pour the batter into the prepared tray and spread out evenly.
- Heat jelly in microwave safe bowl in 10 second burst, stirring each time until the mixture has a semi-liquid consistency to easily swirl around. Repeat the process with the peanut butter. Set both aside.
- Take dollops of the jelly and spoon them in sporadically. Do the same with the peanut butter.
- Using a butter knife, swirl the dollops together slightly to create a marbled effect.
- Bake in the oven for 10-15 minutes. The traybake is ready as soon as the surface of the bake looks shiny and not wobbly anymore.
- Remove from the oven, cut into squares and serve warm.
