Everyone loves potatoes right? If you have potatoes in the house, you have a meal. My mom used to make this Potato, cauliflower, peas, and carrot hash breakfast often. A breakfast favorite we grew up with. Now, I make it for my family. Growing up, my mom often used the potato as sandwich filler with whole grain bread. This is one of the easiest recipes that you will come back to time and time again.
This nutritionally balanced recipe is great for breakfast, brunch, or suhoor during Ramadan. Try it for yourself and see what you think.
- 2 large potatoes
- 2 tablespoon oil
- ½ cup onions, chopped
- 1-2 green chili
- 2-3 garlic cloves, crushed
- ½ teaspoon cumin seeds
- ½ teaspoon turmeric
- 1 cup mixed vegetable (chopped carrots, peas, cauliflower)
- 2 Boiled Eggs
- Cilantro for garnish
- Boil potatoes until soft.
- Peel boiled potatoes and semi mash keeping small chunks. Set aside.
- Heat oil in a pan. Add onion, garlic and sauté until slightly brown.
- Add cumin seeds and green chili. Let cumin splatter in the oil.
- Add mixed vegetables and fry 3-4 minutes.
- Mix smashed potatoes in the mix.
- Sprinkle turmeric, salt and mix well.
- Cook 3-4 minutes stirring often until everything is mixed.
- Garnish with cilantro and serve with sliced boiled eggs.
